1. Pre-heat the oven to 400 Fahrenheit. 2. Dice up the sweet potatoes into small chunks. Sprinkle salt and pepper and place in the heated oven for 25 mintues. 3. Place rice and water in rice cooker and let cook. 4. in a small sauce pan, bring the veggie broth to a simmer. Add the curry paste, lime juice,ground ginger, peanut butter, soy sauce, and garlic. Whisk together until smooth. 5. Add in corn starch and whisk until smooth without any lumps. 6. Warm up the can of beans and serve beans, rice, and sweet potatoes with the sauce on top! 7. Enjoy!
